Set Appliance State:

Mains Power Off
Gas Off
Set Multimeter to Resistance Set meter to measure resistance
Remove violet spaded wires from CH overheat thermostat

Measurement:

Measure resistance across the exposed terminals of the CH overheat thermostat.
