Observation:
Feedback from Ferroli technical support indicates that the CH sensor with the red wires on the heat exchanger flow pipe could pick up residual heat from the heat exchanger on a hot water demand and cause the boiler to cut on and off. Moving the sensor down the pipe to the dog leg bend next to the burner usually resolves the fault.
If the CH sensor on the appliance you are working on is fitted next to the overheat try moving it as suggested above and retest appliance, does the water still run hot / cold?
