Set Appliance State:

Isolate Mains Power to appliance as per TOPs P4
Set Multimeter to Resistance Set meter to measure resistance
Remove connectors from flue overheat stat

Measurement:

Measure for resistance across terminals of the flue over heat stat.
Expected resistance short circuit.
Is resistance reading as expected?
